He’s updated a classic southern recipe by “gently … lightening … and finding local ingredients.” So it’s not quite the old classic you might remember. Then again, the Nero d’Avola that WS is pairing isn’t exactly old-fashioned either. (COS Nero d’Avola Sicilia 2009.)
