Asparagus Risotto

There are some great pairing options to consider for a dish like this, even though asparagus can be tough to pair. Reds are the tougher route here, so let’s stick with whites. I hesitate to call Sauvignon Blanc the obvious choice because that makes it seem so … obvious. It’s a great choice, really, and there are so many good values in so many prices ranges, we’ll leave the specific pairing to you and what you choose to stock.

Another option is Grüner Veltliner. Not nearly as widely available, nor with nearly as many choices, it can be a nice change from the usual whites for folks who haven’t ventured beyond the basics. Hugl is one of our favorites. Reasonably priced, especially when you factor in the oversize bottle. (1 liter instead of 750ml.)
