As for wine, this is another dish that can, in my opinion, go either white or red. Pinot Grigio is an excellent choice, and a slightly chilled, lighter Italian red is a favorite around here. If you grill the veggies, you could even go with a Zin. I’d probably steer clear of heavily oaked wines, but there’s plenty of latitude otherwise.
